Gut-Healthy Za’atar Roasted Mixed Nuts

Roasted nuts during the holiday season is a must have. This one is homemade, extra crunchy and full of rich flavor, thanks to the za’atar and sumac.

Ingredients

  • ½ cup almonds

  • ½ cup walnuts

  • ½ cup pecans

  • ¼ cup pistachios

  • 1/4 cup hazelnuts

  • 1/4 cup Brazil nuts

  • 1 egg white

  • 1 tbsp olive oil

  • 1½ tbsp za’atar

  • 1/2 tsp sumac

  • ½ tsp orange zest

  • 1/2 tbsp chopped herbs (parsley, thyme, rosemary)

  • Kosher salt to taste

Instructions

  1. Preheat oven to 300°F. Line a baking sheet with parchment.

  2. In a large bowl, whisk egg white until frothy. Add olive oil and mix.

  3. Add nuts, toss to coat thoroughly.

  4. Sprinkle in za’atar, salt and sumac.

  5. Spread nuts in an even layer on the baking sheet.

  6. Bake 20–25 min, stirring once halfway through, until golden and crisp.

  7. Cool completely: nuts will continue to crisp as they cool.

  8. Store in an airtight jar for up to a week (or freeze for longer shelf life).
