Heart-Healthy Chilaquiles with Mole Sauce and Ground Turkey
One of my all time favorite brunch items. I decided to focus on a slightly more heart healthy version while still being familiar and tasty.
Recipe first, b.s. story about why I love chilaquiles later.
Ingredients:
½ cup mole sauce (recipe below)
4 oz ground turkey breast, seasoned your way
2 pasture-raised eggs, cooked your way
1–2 zucchini or summer squash, sautéed until golden
1 bell pepper, sliced and sauteed until tender
~12 tortilla chips (lightly crisped or store-bought)
Extra Virgin Olive Oil for sautéing
Kosher salt
Fresh cilantro, chopped
Crumbled cotija cheese
Toasted pepitas
Instructions:
Cook ground turkey and season with your favorite spices.
Slice zucchini and peppers and sauté in olive oil over medium-high heat until golden and tender, season lightly
Cook eggs your preferred way.
For the Mole-Inspired sauce:
1 tbsp tomato paste
1 tsp cocoa powder (unsweetened)
½ tsp chipotle powder or use a bit of adobo sauce
½ tsp cumin
1 small garlic clove, grated or minced
1 tbsp honey
1 tbsp apple cider vinegar
2–4 tbsp water or broth to thin
Kosher Salt
1 tbsp olive oil to emulsify
Make the Mole Drizzle
In a small saucepan or skillet, combine tomato paste, garlic, cocoa powder, chipotle, cumin, honey, and vinegar.
Warm gently while whisking in water or broth until smooth and pourable.
Optional: whisk in olive oil (I used oil to sauté garlic at beginning).
