Heart-Healthy Pita Sandwich with Lean Beef, Olive Conserva, and Sweet Potato Hummus

Heart friendly and quick enough to make in between conference calls.

Recipe first, b.s. story about why pitas are special to me later.

 Ingredients 

  • 1 small whole wheat pita, halved

  • ⅓ cup cooked ground beef (90/10 or leaner)

  • 2–3 tsp olive conserva, recipe here.

  • 2–3 tbsp sweet potato hummus, recipe here.

  • Small handful of fresh cilantro, parsley, or baby arugula

  • Optional: a few pickled red onions or thinly sliced cucumbers

  • Salt + pepper to taste

  • Olive oil for cooking beef

Instructions

  1. Heat a small pan with a bit of olive oil

  2. Add ground beef, season with kosher salt

  3. Cook until browned and crumbly

  4. Once cooked, Stir in olive conserva

  5. Warm pita halves slightly (toaster oven or dry pan)

  6. Open gently and spread hummus inside each half

  7. Spoon in olive conserva–beef mixture

  8. Add fresh herbs or a handful of greens

  9. Optional: a few slices of pickled onion or cucumber for brightness

Press out your ground protein into a hot pan with some oil - cook it like a burger to develop a caramelized crust, then flip over, do the same and then break up. Better crust = better flavor.

I used a low calorie pita and paired this with a side salad for some extra green. Cheers.
